I really don't like carrots but I need to start eating them. How do you "mask" the taste of carrots? like eating them with sugar, chocolate, caramel?

Raw carrots taste Yum!!! But if you don't like it, try eating boiled or cooked. The only disadvantage here is that all its nutrients are wasted. Another carrot dish you may find at any Indian restaurant in your neighborhood is a sweet carrot pudding called Gajar Halwa. It's delicious. I gorge on it when I go to India.

Try them in vegetable soup with lots of other veggies, or add them to the vegetable mix when you make chicken vegetable soup. You can also put add bit of shredded carrots in any sweets where you use apples, except in pies and galettes. Emeril (the cook on foodnetwork) had an amazing recipe for muffins with apples and carrots, and you cannot taste the carrots (check ww.foodnetwork.com).
If you want to eat fresh veggies, try putting a couple together with the cabbage when you make coleslaw. You can also dip them in ranch dressing, if you're not watching calories. I do not like raw carrots dipped in sweet stuff. I do not like anything dipped in sweet dipping, but I guess they will not be too horrible with caramel (if you mix slices of apple and sticks of carrots).

Carrot Salad
Ingredients

very fresh carrots
sultanas
french dressing

Peel and grate the carrots. Soak the sultanas in hot water for five minutes to wash and allow them to swell slightly. This makes them less dry.

Simply mix the sultanas with the carrots and top with French dressing.

I don't think eating them with those three ingredients is healthy. They have different ways of making carrots to bring out the sweetness in them with out cooking all the health out. I like carrots so I eat them in a variety of ways. You could try stir frying or saute them. They taste good that way. You can eat them with dips. Thats the best way to get even kids to eat veggies. Peanut butter, almond butter, preserves, jams, and dips you can pick up or make. You can get the dip ideas off the back of lipton soup boxes. Yum yum and eat up.

I don't like them either, but have found that I do a little if I make them "glazed". Cook them until just slightly tender (I don't like them mushy). THen take 1/4 cup margarine and 1/4 cup brown sugar, a dash of salt and pepper, melt all together, and stir over the carrots. Doesn't taste too bad that way. Just don't cook them mushy. That's what makes them nasty I think.

adding dressing or any sweets will kind of defeat the purpose of eating carrots. Try steaming or cooking them they will taste better or add them to a salad. But if you don't like them, it's ok. Try and eat more of the vegetables you do like.

"Glazed Carrot Coins" - 4 servings

2 tbsp. butter
2 tbsp. brown sugar
2 tbsp. orange juice
1/4 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. ground cinnamon
6 medium carrots; cut into 1/2" slices

In a small saucepan, melt butter over medium heat. Stir in remaining ingredients (except carrots). Add carrots; cover and cook 20-25 minutes or until tender, stirring occasionally.

some times I boil my carrots and then they don't taste so bad. Other times i put them in with the foods i like best and pretend thay aren't there. Most of the time i dip them in ranch salad dressing.

I boil sliced carrots, put butter on them, then pepper and sugar. It's great.
