Deboning is something that cam be done right away and will cut down on the possibility of having that gamey taste.
I read in a cookbook how to get rid of the “gamey” taste of venison. The method takes planning, although minimal time. I take the cut from the freezer and thaw. Then I soak it in a brine solution, no measuring, just some salt in the water in the fridge overnight. The next day, I change the water and rinse and put the meat into a clean salt solution. The next day I do it again. On the third or fourth day, I rinse the meat and soak it in clear water overnight. The next day I either prepare it or marinate it for yet one more night and then it’s ready. It doesn’t taste anything like venison.

I've also heard of using milk or buttermilk to soak the mest.
Personally I never have done anything but add fat to the ground meat. (me not Jane)

My mother and father used to soak the meat in buttermilk overnight it didn't take all the gamey tast away but it lessened it a lot. I hope that this works as well for you as it did for them.

Marinate, marinate, marinate. Get the best steak sauce you have in your area and marinate it for a few days. It's all on the cooking method. I think every guy I work with is a hunter and I said deer tastes gamy and they told me if you cook it correctly it will taste great. It is all these guys are talking about right now, since it is deer season.

One way my Grandma got us to eat deer meat. Was to mix it with ground beef and make sloppy Joe's.
I guess that does not really answer your question. But that's all I got. Other that seasoning the meat heavily.

try and get deer that eat mostly from fields- near farms and not near lowlands or in "wild" country. the deer take on the taste of what they eat.

That different gamey taste is why people like venison. I think soakin it may help, but you can always season it or grind it up and add it to noodles or something.
