what can i do for you is incorrect though, can should be may.

They were both considered correct a hundred years ago, in the meantime only the second one still is.
The rule is that a modal verb, as well as "have", unless it's used in the sense of "possess", can be used with inversion. And "can" is a modal verb.

"What say you?" is grammatically correct but "What can I do you for?" isn't. It's a joke.
