Take an inNout and eat it in his lap (stay untill you finished it) then leave the wrappers in his lap. Do all this while having music turned up full blast in your ipod so nobody can ask you to leave untill your ready to. Before leaving, use his beard as a napkin, or better yet blow your nose in it.

what the hell, i think hocking a lugie in someones face woudl tick off any one, not just the santa at the mall

Go up to the mall santa and insist that he take a picture with your stuffed bear. Then go back twenty minutes later and do it all again, making no acknowledgement of your ever having been there before. Refer to the bear as: "your little miracle baby".

You can tick off the mall santa by doing any of the things that tick off any other person who's trying to do his job. (ask rude questions, heckle, throw things, make faces, ask how much they earn, treat them like they're inferior, yell at them, get snotty about establishment rules, swear at them, actually this list includes everything that will tick off any other human being, too.)
My favorite, though, is to hand the person a nice, long wood paddle, and then mooning them.

ask him about many different things to get for christmas and when he says that he cant ask it over and over like after every sentence.
get your jeans wet then sit on his lap.
get a picture by someone with a digital camera and after every pic, say it wasnt good and you need another
