Irish Soda Bread

Ingredients

3 c Flour
1 c Raisins
1/2 c Sugar
1 Egg
2 ts Baking soda
2 tb Oil
1 1/2 ts Caraway seed
1 1/2 c Buttermilk

Instructions

Grease a round cake pan, press bread evenly into pan to fill pan. Dough is a little sticky. With we knife, cut a large X across the whole top of the bread. Bake at 350 for 40-45 minutes.

IRISH SODA BREAD

2 c. sifted flour
2 c. unsifted whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. golden raisins, chopped
2 tsp. caraway seeds
1 1/4 - 1 1/2 c. buttermilk

Preheat oven to 375°F for at least 15 minutes.
Combine ingredients in the bowl of an electric mixer in the order given. Grease and flour a cookie sheet (or optionally, placed instead in a greased and floured bread loaf pan). Form dough into a circular shape, and cut a cross in the center with a sharp knife. Dust lightly with flour and bake in oven until nicely browned and when tapping on the bottom causes a hollow sound.

Irish Soda Bread:

2 1/2 cups all-purpose flour
2 1/4 cups whole wheat flour
3/4 cup rolled oats
1 tablespoon plus 1 1/2 teaspoons baking powder
2 teaspoons sugar
2 teaspoons salt
3/4 teaspoon baking soda
1 3/4 cups buttermilk
6 tablespoons unsalted butter, melted and cooled

1. Preheat the oven to 350°. In a medium bowl, whisk the all-purpose flour with the whole wheat flour, rolled oats, baking powder, sugar, salt and baking soda. Add the buttermilk and cooled butter and stir with a wooden spoon until the dough is well combined.

2. Turn the dough out onto a lightly floured surface and knead it 10 times. Shape the dough into a 9-inch round loaf and transfer to a baking sheet. Slash an X about 1/4 inch deep in the top of the bread. Bake for about 1 hour, or until the bread is golden and the bottom sounds hollow when lightly tapped. Transfer the soda bread to a wire rack and let cool completely.:

Make Ahead: The bread can be made up to 1 day ahead.

Yield: MAKES ONE 9-INCH ROUND LOAF

Irish Soda Bread
1 3/4 cups water
3 tablespoons granulated sugar
1 teaspoon salt
1/2 cup shortening or butter
5 cups white bread flour
3 tablespoons baking powder
2 1/2 tablespoons milk powder
1 1/2 cups golden raisins
1 tablespoon caraway seeds (optional)

Place all ingredients in mixing bowl, except raisins, and mix with paddle until incorporated. Add raisins and mix for one minute more. Mixture is very soft. Place mixture on well-floured surface and form into 2 equal round dough balls. Place on either parchment paper or lightly greased sheet pan. Press top of dough down slightly and score or cut a cross on top of dough 1/2 to 3/4 inches into dough. Bake in 350 degree F oven for 30 minutes. Let cool and serve.

"This is the real thing! You can use an egg and slightly less milk for a different texture. It is also possible to use water instead of milk and buttermilk, but this makes a much denser loaf."
INGREDIENTS:
3 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
4 cups whole wheat flour
2 teaspoons white sugar
2 cups buttermilk
1 cup milk
1 tablespoon vegetable oil
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, sift together all-purpose flour, salt and baking soda. Add whole wheat flour and sugar; stir to combine. In a separate bowl, mix together buttermilk, milk and oil.
3. Add milk mixture to flour mixture; mix just until combined. Divide dough in half and form into two round, flat loaves. Place loaves on a lightly greased baking sheet.
4. Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for an additional 25 to 30 minutes, until golden brown.

1½ hours 20 min prep

24 servings 2 loaves

4 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
3 eggs
1 pint sour cream
1 cup raisins

Preheat oven to 325.
Grease (I use butter) two 8x4 loaf pans.
Mix all dry ingredients in a bowl.
Add remaining ingredients.
Split batter between the loaf pans.
Bake for 1 hour.
