Atonement for sin- For sin was not forgiven unless blood was shed. And Jesus Christ was the one sacrifice for sins- He shed His blood and we are told that just one drop of His blood would cover the entire sins of the world! And yet he poured out His blood on that cross- and suffered immensly. He was the one sacrifice- just as in the OT they sacrificed animals for different offerings and sin offerings--because it had to be blood- God made a way for all sin to be washed clean, through Jesus Christ- when we believe in Him and repent of sin- Glory be to Him!
Hebrews 9:22
In fact, the law requires that nearly everything be cleansed with blood, and without the shedding of blood there is no forgiveness.

The blood represented a violent death (as it does in all the Old Testament sacrifices), and the phrase "blood of the covenant" meant that by the death of someone else, the Israelites had entered into a special agreement with God. This is a shadow of what was to come when the Messiah came. So when the Bible says that we are saved "by the blood of Christ", it refers to His sacrifice on our behalf, His death on the cross in our place. We get the benefit of His sacrificial death when we believe in Him, accepting His work on our behalf.

the blood of Christ was a symbol to god of our blood. Which god calls for in atonement for our sins. Before the Christ sacrifice you had to sacrifice doves or goats or sheep to atone for your sins. This was as a substitution for your own blood which God wanted spilled for your evils. After the sacrifice of the Christ his blood, which was considered divine blood and therefore able to substitute for all human sinners blood

Just what it is, the Blood of Jesus. It also symbolizes forgivness and salvation because Jesus spilled His Blood for Our Salvation and the forgivness of Our Sins.
