Depends on what you're using the incense for. In many Pagan religions, incense can be used as an offering to deity or to invoke atmosphere during ritual, prayer, etc... Incense can also be used to cleanse, purify, or banish.
For dope smokers - incense might be used to cover up the pot smell.
For everyday non-Pagan, non-dope smokers, incense can be used to make your house smell better.
So it really depends on your purpose.

Incense is used for many different things. Certainly it is a room deodorizer, but the scent you choose can set the mood of the room or a gathering. Incense is often used in religious ceremonies, because scent is a powerful sense that does a lot for setting the tone of an experience or place - or can help you reach meditation quickly (just like it can transport you to a lost or forgotten memory, if you know what i mean). Ever smell cookies baking and suddenly feel small and at grandma's again? For some, the scent of Frankinsense always makes them feel they are in a church or sandalwood reminds them of their yoga practice.
Some think the different scents have different properties - sort of like essential oils. Some can be stimulating, some soothing, some sensual, and some very clean smelling.

It is symbolic of our prayers rising up to heaven. If you recall, in Old Testament times the smoke of the sacrifice rising upward was symbolic of the sacrifice being accepted by God, while the smoke coming down to the ground indicated God's displeasure or rejection of the sacrifice being offered. Rev 5:8 says that our prayers, having risen to heaven like incense, are presented to God by those before His throne - the intercession of the saints.
