I am looking for healthy, simple recipes, am not interested in heating up a tin of soup or anything like that. I amy be single but I do enjoy healthy and tasty food!

Oh, dont I wish I knew. My cook (my husband) is gone for a while and I have to cook for myself....or not cook. I have been eating out every now and then but here are a few of the things I make...

Chicken on the Foreman Grill...make 2 and save one for lunch the next day, canned veggies
Tuna Melt Sandwich
Pasta
Frozen pizza, also good for left-overs
Cereal - always the trusty dinner option
I make breakfast items a lot, like omlets, bacon, waffles
I made California rolls once, those were yummy
Any boxed food item or frozen food item works well.

Salads, Stirfrys,Chunky soups,Mac & cheese,Mirowave d spuds
Steaks Deli products

My son buys Swanson or Banquet frozen dinners which is quick and easy to microwave. There is also canned pasta, chili, and soup.

toasted tomato sandwiches. (just like it sounds toast your bread, butter and add a little mayo add tomatoes fold together and enjoy)

baked spaghetti or lasagna

veggie wraps or with meat your choice

granola fruit and yogurt

eat out!
It's really cheaper.
Try a good Chinese restaurant where the portions are usually huge.
That way you have leftovers for the next day.
