I got rid of my counter canisters a long time ago -- would go stale or little bugs. I buy those glass containers with the rubber seals and locking lids. I keep all the dry stuff that I don't use quickly. Flour / Sugar / Oatmeal / Hot cereal / Brown Sugar / Coconut / Nuts, etc, etc.

I only have a sugar canister out, got rid of the rest a long time ago. I keep my flour in the freezer, keeps it fresher and no little creepies getting in there in the summer.

Sugar, bread flour, self rising flour, and AP flour. But I have an old sun tea jar that I keep my basmati rice in if that counts.

brown sugar would dry out. I saw someone recommended using a slice of bread. it would help but i dont think it would keep it moist for too long.

if you use one for brown sugar, put a slice of bread in the container (yes it sounds wierd) but it will keep the brown sugar soft and won't get hard! ;) replace when it gets hard
