Sweedish Meatballs with Sour Cream

1 1/2 pound ground beef
3/4 cups dry bread crumbs
1/4 cup milk
1 egg
2 tablespoons finely minced onion or 1 tablespoon instant minced onion
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper

* Sauce
* 1/4 cup flour
* 1 3/4 cup water
* 1 teaspoon beef base or bouillon granules
* 1/2 teaspoon salt
* 1 tablespoon tomato paste
* 1 cup sour cream
* dash pepper
* 1/8 teaspoon nutmeg
* minced parsley

PREPARATION:
Mix ground beef, bread, milk, egg, onion, 1 teaspoon salt, 1/4 teaspoon nutmeg, and 1/4 teaspoon pepper. Shape mixture into 1-inch balls; place in an ungreased 15x10x2-inch jelly roll pan. Bake at 350° until browned, about 25 to 30 minutes.

Remove meatballs to serving dish and keep warm.

Place 4 tablespoons of drippings from pan in saucepan over low heat. Stir in flour. Cook, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in water, beef base or bouillon, 1/2 teaspoon salt, tomato paste, dash pepper, and a few dashes nutmeg. Bring to a boil, stirring constantly; continue to cook and stir for 1 minute. Add sour cream and heat through; do not boil. Pour sauce over meatballs. Sprinkle with a little minced parsley.

Swedish Meatballs with Worcestershire Dill sauce

1 lb ground beef
olive oil
1 c onion, diced
1/2 c fresh bread crumbs
1/2 c milk
2 eggs, lightly beaten
1/4 tsp nutmeg
1/4 tsp allspice
1 tsp salt
1/2 tsp white pepper

Sauce
2 Tbs butter
2 Tbs flour
1 c beef stock
1 c milk
2 tsp Worcestershire sauce
1 tsp fresh dill
1 tsp parsley
dash garlic powder
salt and pepper

In a skillet, heat a bit of oil and sautè onions until soft and golden.

In a large bowl, mix beef, onion, and remaining ingredients. Knead well and refrigerate for 30 minutes to set. Shape meat into small balls and fry on well oiled skillet over medium heat for 5 minutes, or until golden brown.

Sauce
Whisk together flour and butter together in a sauce pan to form a roux. Slowly incorporate stock and milk. Bring to boil and cook for a few minutes. Remove from heat and whisk in seasoning.

In Sweden, the meatballs are accompanied by boiled potatoes.

MEATBALLS:

1/2 c. minced onions

Mix all above ingredients thoroughly. Shape into balls the size of a walnut. Brown in 1/4 cup oil. Remove meatballs and make gravy.

GRAVY:

1/4 c. flour
1 tsp. paprika
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. sour cream

Mix flour, paprika, salt and pepper into hot fat in skillet. Stir in 2 cups boiling water and sour cream. Return meatballs to gravy and cook 15 to 20 minutes. Serves 6 to 8.

Shape mixture by rounded tablespoonfuls into balls. In large skillet, slowly brown and cook meatballs in oil. Remove meatballs and keep warm.
Blend flour, paprika, 1/2 tsp. salt and 1/8 tsp. pepper into oil in skillet. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat; stir in water. Heat to boiling, stirring constantly; boil and stir 1 minute. Reduce heat and gradually stir in sour cream, mixing until smooth. Add meatballs; heat through.

Meat Loaf

1 can (4 oz0 mushrooms (pieces and stems ), drained and finely chopped
½ cup onion, finely chopped
¼ cup fresh parsley, snipped
1 cup fresh rye or white bread crumbs (about 2 slices of bread)
2⁄3 cup milk
1 egg
1 ¼ teaspoon salt
¼ tsp ground black pepper
¼ tsp ground allspice or nutmeg
1 lb (90%) ground beef
1 lb lean ground pork

Noodles and Creamy Gravy

1 package (12 oz) uncooked egg noodles
1 jar (12 oz) mushroom or beef gravy
2 Tbsp milk
¼ cup sour cream

1.Preheat oven to 350ºF. For meatloaf, finely chop mushrooms and onion using food chopper. Transfer to Classic Batter Bowl using Kitchen Scraper. Snip parsley using Kitchen Shears. Add parsley, bread crumbs, milk, egg and seasoning to Batter Bowl; mix well.
2.Crumble beef and ground pork into batter bowl; mix lightly but thoroughly. Shape meat into loaf in Stoneware Loaf Pan.
3.Bake 1 hour and 15 minutes to 1 hour 20 minutes or until meat is no longer pink in center and internal temp reaches 160ºF using Pocket Thermometer. Remove meat loaf to serving plate; let stand for 10 minutes.
4.Meanwhile, cook noodles in Professional 4 Qt Casserole according to package directions; Drain. For creamy gravy, heat gravy with milk in Professional 1 qt Saucepan over medium heat, stirring occasionally with Nylon Spiral Whisk. Whisk in sour cream; remove from heat.
5.Cut meat loaf crosswise in half. Cut one half into 8 slices and serve with noodles and creamy gravy. You can tightly wrap remaining half and refrigerate for up to 4 days if desired.

1 pk (8 oz) medium egg noodles
8 oz Fresh green beans, cut into
1 1/2" pieces, about 2 cups
2 c Sliced fresh mushrooms,
About 8 oz.
1/3 c Sour cream
Fresh dill sprigs, optional

Instructions

In large bowl,combine egg,bread crumbs,club soda,2 tbsp. chopped dill,3/4 tsp. salt and 1/4 tsp. pepper;using hands or wooden spoon, blend well.Shape mixture into 1 1/4" balls.In 12" skillet,over medium-high heat,melt 2 tbsp. butter;add meatballs;cook about 12 minutes, turning frequently until browned on all sides.Meanwhile,prepare noodles according to package directions,add green beans to boiling water along with noodles;do not add salt.When meatballs are browned,remove to plate using slotted spoon.To drippings in skillet,add remaining 1 tbsp. butter;melt over medium-high heat.Add mushrooms;cook about 5 minutes, stirring frequently until crisp-tender.Return meatballs to skillet along with 3/4 cup water and remaining 1 tbsp. chopped dill,1/2 tsp. salt and 1/4 tsp. pepper.Increase heat to high;bring to boil.Reduce heat to low;cook,covered,5 minutes until meatballs are cooked through. Stir in sour cream;cook 2 to 3 minutes longer until heated through. To serve:Drain noodles and green beans;arrange on serving platter. Spoon meatball mixture over noodles;toss quickly.Garnish with dill sprigs,if desired.Makes 4 servings.
