Keep the meal a high protein meal with wine. Nice green salad with pine nuts. Baked potato and medium rare steak, grilled. (turn steak once, this will keep it tender.) Red wine. A Merlot. Get two bottles if he likes wine. This should make for a romantic evening. Pick up a desert for a midnight treat. Cheese cake. I don't know where you live. "Nations Burgers" has a good cheese cake. Use real butter for the potato and have your garnishes all prepared for the table. Don't get bread. Too much starch for the meal.

Ribi is a good cut for the steak. With or without the bone.

Don't forget you are part of the "real nice meal." Hair fixed, dressed nice, smelling wonderful.

On my anniversary my man took us on a picnic, (I know it's to cold now) but you can do this at home. He got a huge london broil. Seasoned it with seasoning salt & garlic. wrapped it in foil and put in on the grill ( you can use an indoor grill), for about 7 minutes on each side. In another piece of foil he took some baby shrimp with minced garlic and butter, and set that on the grill right before the steaks were done. The shrimp was poured over the steak when it was done. He also made a salad and brought some red wine. It was fabulous.

On another occasion I made him a great meal aswell. I used boneless chicken breast. I thinned it out with a meat mallet (tenderizer) as thin as I could get it.Season it with poultry seasoning, then I spread some onion and chive cream cheese on it then rolled it up and wrapped a strip of bacon over the top, bake this @ 375 degrees for about 25-35 minutes or until bacon is crispy. I served this with alfredo pasta, dress the chicken with chives and a little grated parmesan cheese as well as the pasta.

For dessert chocolate is always great! Chocolate dipped strawberries or even a chocolate mousse.

Pesto Pasta with Grilled Shrimp!!

This meal is so easy and so delicious, he'll love you for it and you'll love it because it is so simple. If it is for you and your husband follow this recipe and for each extra person add a 1/2 lb of shrimp & pasta.

Ingredients:

1 pound Shrimp, shelled and cleaned (can from the store that way).

1 pound of Pasta (I prefer spaghetti, bit fettucini works well) whatever you prefer.

1 8oz jar of Traditional Pesto

1 loaf of french bread

Boil your pasta to al dente consistency drain and leave to the side. Take the shrimp marinate in olive oil and season to taste. Place on a griddle (or a hot skillet) until pink (usually about 2-3 minutes each side). While Shrimp is cooking, take the the spaghetti and place in a boil and mix in the Pesto sauce until well covered.

Slice the bread diagonally, brush on some olive oil season to taste (I use Italian seasoning) place in the oven until crispy.

Take the shrimp and place on top of the spaghetti. Serve with a salad if you like, but I find that is a little to much food.

Elegant Pork Loin Roast
INGREDIENTS
1 (4 pound) boneless pork loin roast
1/4 cup Dijon mustard
2 tablespoons packed brown sugar
1 1/2 cups apple juice, divided
1 cup pitted prunes
1 cup dried apricots
3/4 cup red wine
1/4 cup packed brown sugar
1/8 teaspoon ground cloves
2 teaspoons cornstarch
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
Place the roast in a shallow roasting pan. Mix together the mustard and 2 tablespoons of brown sugar; spread over the roast.
Roast for 3 hours in the preheated oven, basting with 1/4 cup of apple juice every 30 minutes. Roast is done when the internal temperature reads 160 degrees F (70 degrees C).
During the last hour the roast is cooking, combine the prunes, apricots, red wine, 1/4 cup brown sugar, 3/4 cup of the juices from the roasting pan, and cloves in a saucepan over medium heat. Bring to a boil, then cover and simmer for 15 minutes. Spoon the fruit around the roast in the roasting pan during the last 30 minutes of cooking.
When the roast is done, place it onto a serving platter and spoon the fruit around it. Remove 1/4 cup of the drippings from the roasting pan, and mix with the cornstarch. Stir into the pan of drippings, and cook over medium-high heat, stirring gently until thickened and no longer cloudy, about 5 minutes. Transfer to a gravy boat or serving bowl.
Slice the roast, and pass the sauce for guests to serve themselves.

Buy some beef short ribs, place in baking dish, spread a layer of ketchup over them. Sprinkle with about a half cup of brown sugar. Sprinkle with a large onion, minced. Bake in 350 oven for about 2-3 hours, depending on the amount of ribs. They should be falling off the bone tender. Delicious. Serve with his favorite side dishes.

Pasta bake. Take some pasta, boil it and mix with plenty of cheese sauce and partly cooked leeks. Mix in cooked salmon flakes. Put in the oven for 15 minutes. Take out of the oven and sprinkle with loads of grated cheese, back in the oven until the cheese has all melted and turned golden brown. Lovely!!

Lobster!

I surprise my husband every now & then by coming home with a nice bottle of wine, a few lobsters, some shrimp & make baked potatoes, with a few candles, makes a nice romantic dinner!
