A few years back Scientific American published an article by two guys who built a trebuchet that launched a car about 100 metres into a paddock. The mediaeval ones that launched infected animal carcasses into besieged castles would have been similar. It consisted of a winch to lift a heavy weight on a cable about 4 metres. The weight was dropped onto the short arm of a seesaw. The car was on a platform at the end of a longer arm. The short arm went down and the car was thrown upwards. Just scale it down to launch fruit.
