im trying to make a spaghetti sauce much like alfredo, and it calls for whipping cream, but all i have is milk. can i substitute it? and how much if i can? if not, any suggestions for alternatives?

Rocki have no fear, milk is fine, the liquid is what carries the cheese or suspends it so to speak. Now add butter to your milk to give it more richness, much like w/cream and a little cornstarch or arrowroot to thicken it back up to the consistancy your looking for, remember that the cornstarch won't be it'd thickest till she's up to temp so watch and stir. If it tightness up on you add a little more milk. You're good to go

You didn't say if you have Cool Whip or powdered Dream Whip. Cool Whip is premade, frozen whipped topping and would work. Dream Whip is a powder you add to milk to make whipped cream and it would also work. Nestle's Media Crema is cream, but you'd want to sweeten it with some sugar or powdered sugar probably. Do you have a neighbor who cooks you could borrow from and pay her back when finances allow? As for adding butter to milk, it's the cream removed from the top of milk that is made into butter. BUT... simply blending butter and milk won't give you back the right consistency without a thickening agent and whatever you use as a thickening agent is likely to make the result unpalatable. If you don't have any of the 3 products I mentioned, I recommend borrowing from a friend.

Whipping cream/heavy cream can be substituted with an equal amount of evaporated milk, but only in soups and sauces. This kind of substitution is not appropriate for whipping or baking. Enjoy your bread pudding...yum!

I have actually never heard of using whipping cream for alfredo. You can use heavy cream which most restaurants use.

I wouldn't use milk at all, the sauce won't be rich enough. You really need to use heavy cream.

A can of evaporated milk will also work, but it will not have the same mouth feel. You *could* use milk, but the sauce will be much thinner.

Yes you can it will make it lighter and not as heavy. use the same amount as you would cream
