Do I say, "Juan le gusta el cuento de Caperucita Roja" or
"A Juan le gusta el cuento de Caperucita Roja" or something else?
Sorry my Spanish is rusty. Native speakers and Spanish students appreciated for this. I am trying to remember if it's "Juan le gusta" or "A Juan le gusta" since I'm not sure if the "a" gives it emphasis.

You say it like this..

A Juan le gusta el cuento de Caperucita Roja.

It sounds better "A Juan le gusta"...

The second sentence is the right. A Juán le gusta el cuento de Caperucita Roja. It's necesary the preposition "a" here.

It is -A Juan- and it is the way it is always written and said it is not for emphasis the only way not to use the -A- is if it written like this -Juan gusta del cuento de la Caperucita Roja-
