When you are abroad - it's a very good idea to know where you will be staying and what is available in the way of accomodations. I don't think you want to wing it in regard to that. Having a safe place to stay or camp is quite important. You might end up in a town that is all booked up due to a holiday or festival of which you were unaware. You don't want that to happen.
However - once you have places to stay - you don't need to plan what you'll be doing everyday.
From your name and avatar - I cannot tell if you are male of female. Everyone should be careful - but women should be especially careful when backpacking in areas with which they are not familiar.

From my experience, I think there is such a thing as overplanning. If you don't have lots of time, you have to have a basic plan as to the bare minimum you want to do and see. Cosequently, you'll have a rough idea of the route you're taking and the best way to get around. But once you start travelling, you'll come across other things you want to see and do and your plans may change. Just buy your interrail ticket, get some Euros, and go - you'll find accomodation along the way, you'll figure out the trains, other backpackers will give you ideas on what to do and see.

Planning is good in moderation. You can plan too much and it will just become a mundane checklist of things to do in Europe. Sure, do some touristy stuff but make some local freinds and see how they really live and where they eat and play. If you do the generic guidebook trip you will have had an ok trip but come back with the same pictures and the same stories as all those before you. Get off the beaten path sometimes, I say.
I remeber once in Freiburg, Germany a hostel mate asked what I was going to do that day. I told him "I intend to get lost" . He asked to come with and we had a great time. We walked for miles. You get to see more quaint shops in the alleys that cars can't travel.

No, there is no such thing as overplanning a trip. To be quite honest, I don't think you can plan enough to get ready for a trip.

Yes you can over plan a trip and the trouble with doing so is if things start to slip a little from the plan you might start getting anxious about it.
I prefer to do a basic plan and let the variables surprise me. Usually they're nice surprises.

Having travelled loads all over the world I would say just go with the flow. I have never booked anything in advance! Just get there, look around, settle when you find a place you like and suits you. It is great to have that freedom as long as you do not get anxious about it.

You should maybe relax and have a vacation even if it takes you to a park or beach for the night, enjoy it not a lot of people are that fortunate.
