I am looking to do something flavorful with the chicken thighs and BBQ sauce I have at home. I was thinking of marinating the chicken in a BBQ sause for about an hour and a half then placing the thighs in the oven to cook with a little of the marinade poured on top. When the chicken thighs are just about ready I'll place them in a large pot with some BBQ sauce mixed with a little water and place a lid on top to hold the steam in. Anyone think I will get more moister and flavor with this not yet tried recipe?

INGREDIENTS:
2 cups apple cider vinegar
4 ounces tomato paste
1 1/2 tablespoons sugar
1 1/2 tablespoons peanut oil
1 1/2 tablespoons salt
3/4 tablespoon steak sauce
3/4 tablespoon Worcestershire sauce
1/2 tablespoon hot pepper sauce

PREPARATION:
Mix all ingredients together in a sauce pan and let simmer for 10 minutes. Marinate chicken in 2/3 of the sauce overnight. Use the other 1/3 to baste the chicken while barbecuing.

1/2 cup sugar
1/2 cup salt
dried herbs (I like thyme and rosemary)
2 cups water
bring to boil
add 1 qt ice water (mostly ice)
put chicken in this (called a brine)
the salt and sugar in the brine will draw the more flavor and moisture into the chicken
let set in the fridge for at least 2 hrs

Marinating in BBQ sauce can actually draw moisture out of the chicken because its high salt sugar content and relatively low moisture

then bake the thighs skin side up in a hot oven 375-400 shouldn't take long maybe 20 mins
just before they are fully cooked dip them in bbq sauce and place back in oven
boiling after baking will just make it soggy

You may want to reverse your order, try cooking the chicken covered with the extra moisture and then putting it in the oven with more sauce. Part of the yummyness (for me) of barbeque sauce is when it just starts to caramelize because of the heat and sugar. If you add more water to the sauce later you may get something a little soupy.
You could also try just putting the chicken and sauce in a covered casserole, cook til almost done then uncover for the last part of the cooking.

Spread peanut butter on the chicken before marinating- make sure you baste...trust me.

Yum BBQ Peanut Chicken- moist delicious and totally unique.

make sure to baste them while they're in the oven, even with the marinade. I don't like chicken thighs for some reason. they taste fatty to me. Breasts would be better!
