My husband leaves for work at 4 am. I don't like to send him off with cold cereal every morning since it's so cold and I would like some quick breakfast ideas to make that early that he can eat on the go. Thanks.

If he's leaving at 4 am, you're cooking earlier than that. Sorry darlin', but nothing I do is fast at 2 or 3 am. You may have to plan ahead and do a lot of "make ahead" things so you can sit and have coffee and breakfast with him without running yourself ragged. A small time investment one afternoon or evening and you'll be set for a while.

Here's a breakfast casserole you put together the night before and refrigerate overnight. You bake it when you wake up the next morning. I'm not sure how many people total in your family, but it's easy to scale this recipe down. Just use an 8X8 pan and halve all the ingredients.

1 lb sausage (hot or mild)
6 slices bread, cubed
1 cup grated cheddar cheese
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon mustard

Brown sausage in skillet and drain well. Grease 13 X 9 inch casserole dish. Line dish with bread, then top with cheese and sausage. In bowl, combine eggs, milk, and seasonings. Beat well and pour into casserole. Refrigerate overnight. In the morning, bake casserole at 350 degrees for 30 minutes.

Here's a recipe for breakfast sandwiches you freeze and nuke one at a time when you need them.

4 (16 1/3 ounce) cans refrigerated buttermilk biscuits
20 eggs
2 lbs ground sausage
16 slices sharp cheddar cheese
dry mustard (to taste)
pepper (to taste)
garlic salt (to taste)
butter or margarine

Bake biscuits according to package directions. While biscuits are baking start browning sausage. In a mixing bowl combine eggs dry mustard and pepper. Add egg mixture to the browned sausage and cook until eggs are done. After biscuits have cooled cut them in half and spread with butter. Sprinkle buttered biscuits with garlic salt. Cut cheddar cheese slices into fourths. Put one fourth of cheese slice on bottom half of biscuit. Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese). Place another fourth of a cheese slice on top of the egg and sausage mixture(putting the cheese on this way "glues" the sandwich together when it is reheated). Place top of biscuit onto sandwich. Wrap each sandwich in wax paper and put them in large freezer bags. Place them in the freezer. To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

And now for the ever popular make ahead breakfast burrito. Again, you freeze these and then nuke 'em when you need them.

1 lb lean sausage meat
6-8 eggs, depending on size eggs
1 tablespoon minced onions
1/4 cup picante sauce
1/4 lb monterey jack cheese, shredded
12 flour tortillas
1 pinch salt and pepper, to taste

Spray a non-stick skillet with vegetable oil. Crumble sausage and
brown slowly. Drain in white paper towels. Wipe grease from skillet with paper towels, leaving a thin layer of oil. Beat eggs with minced onion and picante sauce.Scramble eggs in skillet until done. Toss sausage, eggs and cheese together. Spoon into tortillas and wrap, folding sides to middle and then rolling to make burrito. Place on parchment paper-lined cookie sheets; freeze until solid. Wrap individually in paper towels, and package in zipper-lock freezer bags. When ready to use remove burrito from Ziploc and microwave burrito in paper towel 2-3 minutes or until hot.

When I was the lead cook for a large facility, I relied on all of these recipes heavily before I left for work in the morning. I knew I'd leave the house around 3 am and wouldn't get back until dinner time. I usually didn't get a break during the day, either. Unless I have company over, I'm by myself all the time, so these foods were often my breakfast AND my dinner. I originally found all of these online in various places.

Make breakfast burritos,biscuits bagel ahead of time in large quantities and freeze a couple in zip lock baggie. Take out night before and micro. Also if you like to bake muffins are good with a piece of fruit.In a hurry there's lots of new breakfast bars out on the market in your cereal isle.

quick pancakes-

125ml milk
125g self raising flour
1 egg
1 teaspoon baking powder
pinch salt

Mix the salt with the flour and the baking powder
add the egg and then gradually add the milk and beat the mixture well
drop small circles of the mixture into a non stick (warm) pan or a pan with a small amount of sunflower oil (warm still)
take the small pancakes out when golden brown and cover in golden syrup, lemon curd etc.

Here's another idea for you..

"Jam 'n' Cream French Toast" - 1 serving

2 tbsp. cream cheese; softened
2 thick slices cinnamon-raisin bread
2 tbsp. strawberry jam
1 egg
1 tbsp. butter
Maple syrup (optional)

Spread cream cheese on one slice of bread; spread jam on other slice. Place jam-side down over the cream cheese.
In shallow bowl, beat egg; dip both sides of bread into egg. In a skillet, melt butter. Cook bread 3 to 4 minutes on each side or until golden brown. Serve with maple syrup, if desired.

Maybe you can tuck these into pocket bread...

"Breakfast Sausage Patties" - 4 servings

1 lb. ground turkey
3/4 tsp. salt
1/2 tsp. rubbed sage
1/2 tsp. dried thyme
1/2 tsp. ground nutmeg
1/8 tsp. cayenne pepper
2 tsp. vegetable oil

In large bowl, combine all ingredients (except oil); shape into 8 patties. In large skillet, cook patties in oil over medium heat 5 minutes on each side or until juices run clear. Drain on paper towels.

If you cook bacon in advance, it can be heated in a few seconds in a microwave or a minute or two on the skillet. Throw it on some toast and you are all set. Also, scrambled eggs in a microwave aren't bad and lower fat than fried (though they aren't quite as tasty as if they are fried) if you are pressed for time -- spray pam into a bowl, throw in the egg, scramble it with a fork and microwave for 60 seconds, and add pepper (goes good on that bacon sandwich too).

Sonic(?) had an ad running for awhile that looked really good. From memory, rolled up injside a flour tortilla was scrambled eggs, tator tots, bacon and cheese. You could pack along a thermos of hot coffee or cocoa.

Breakfast burritto- quiche- biscuits-

There are whole areas of the supermarket that sell frozen microwaveble breakfasts with a wide variety of differant things. I love them on days I am on the fly.

By the way- that is really nice of you to do for him.

BLT Breakfast Sandwiches:

Check the hollandaise sauce package for the fresh ingredients needed to prepare it.

1 (0.9-ounce) envelope hollandaise sauce mix
6 bacon slices, cooked and crumbled
2 (3-ounce) packages cream cheese, softened
2 tablespoons chopped fresh chives
3/4 teaspoon seasoned pepper, divided
4 sourdough bread slices, toasted
1 tablespoon butter or margarine
4 large eggs
4 lettuce leaves
2 small tomatoes, sliced

Prepare hollandaise sauce according to package directions; keep warm.

Stir together bacon, cream cheese, chives, and 1/4 teaspoon seasoned pepper; spread evenly on one side of each toasted bread slice.

Melt butter in a large nonstick skillet over medium heat. Gently break eggs into hot skillet, and sprinkle evenly with 1/4 teaspoon seasoned pepper. Cook 2 to 3 minutes on each side or until done.

Place lettuce leaves and tomatoes on top of bread slices, and top with fried eggs. Drizzle hollandaise sauce evenly over top, and sprinkle evenly with remaining 1/4 teaspoon seasoned pepper. Serve immediately.

Yield: Makes 4 servings

A nice toasted bagel with cream cheese and if he likes salmon, lox with chopped onions, cilantro (also known as coriander) and some capers.

If you have it toasted and ready to go with a cup of coffee, he'll love you dearly for doing that.

THEY HAVE BREAKFEAST BURRITOS THAT YOU JUST POP IN THE MICROWAVE, OR YOU CAN MAKE EGGS, BACON OR SAUSAGE WOULD BE BETTER THE NIGHT BEFOR AND IN THE MORNING HEAT UP SPRINKLE SOME CHEESE AND ROLL IN A TORTILLA OR PUT BETWEEN SOME TOAST AND HE'S READY THROW IN SOME COFFEE AND YOUR GOOD TO GO.
