Plain potatoes are just too dry for me even with added herbs/spices. I'm thinking of trying Molly McButter mixed with yogurt or yogurt cheese as a topping. Maybe a little avacado? Fattening I know, but healthy. I have some milled flax seed but that might be too dry (and bland). What else would be good on a baked potato? Thanks

(if you don't mind calories!)- cream cheese, Mayo, blue cheese, cottage cheese, feta cheese (esp with a bit of olive oil and Ital or Greek seasoning), fresh basil... yummmyyyyy

If you use yoghourt -- try straining it overnight. A coffee filter works well, but a paper towel will also do. _Much_ thicker and creamier.

Healthy, and not dry: baked beans. I like to add mushrooms, and broil a bit of cheese on top of that.

Quite obviously: cheese. Less obvious: cream, cottage, feta, raclette.

Various sauces -- hollandaise and persillade are both good.

A curry of some sort -- just a jar of curry sauce, or a vegetable or lentil curry dumped on...

Just about any condiment (salsa?) or dip (that spinach-artichoke stuff?) you can think of.

The British are not nearly so big on butter and sour cream when it comes to baked potatoes, so try searching UK sites.

plain yogurt is great and tangy - try mixing in sliced green onion or some fresh herbs like dill or basil. Also - i love baked potatoes with a salsa topping - lots of toamto and onion and cilantro with salt and pepper. yum.

I love to top it with ranch and cover with a mixture of cheddar and Jack cheese. Pop it in the oven or microwave a little so that the cheese melts well or use the shredded kind.

Tzatziki sauce. You can find it in the yogurt/sour cream area at the supermarket. Just a thin layer will do...big taste, low in calories. It's the white sauce served with Greek food...you know? Mmmmm, love it!!

I like to stuff the potato with stouffer's spinach souffle (and serve it with chicken cordon bleu).

Or

Spinach, garlic and blue cheese. (add bacon, if you like)

Or

Pesto sauce.

Or

Cottage cheese sprinkled w paprika.

Have you tried lemon pepper, low fat chili beans with cheese, any soft cheese I like them with brie.
