Get a vacuum saver machine. It will keep the meat for up to 2 years.

I use a sealer. But before I had one, and what I think works the best is freezing the meat in a ziploc for about an hour so it gets firm. Then take it out, wrap it tight in Saran wrap, then put it in the ziploc freezer bag and squeeze ALL the air out. Make sure to label the ziploc with the date and freeze away.

I use this method when I buy burger on sale and have to portion it up for freezing.

I have those pop up sheets of wax-tex which are sort of like wax paper/parchment. Wrap well in that, then put in a ziplock bag and squeeze as much air out as you can. I've never had a problem with freezer burn this way.

(You can get those pop up sheets at Costco or Sam's)

Airtight! I use freezer paper, taped shut, then wrap in plastic, then a freezer zipper bag. A "FoodSaver" thing is great, too.
