I am assuming you are asking about bad habits of personality, and not sleeping issues. If I am wrong, then ignore this answer. Anyway, the first, most important question is are you trying to change you or someone else? If it is you, then you can work hard, or see a therapist for some behavioral strategies specific to your difficulties. If it is to change another, then is it a child, sibling, or significant other? Going to family/couple therapy may be helpful, but for another adult, it is difficult to make them change unless they want to. If they do not want to change, you could tryto find someone who specializes in Transtheoretical therapy to help you out, or try to get family therapy.

I don't know if there is actually a way to change someone's sleeping habits. Usually, as my doctor is frequently explaining to me, stress is the main factor for causing talking nonsense and sleeping restlessly and sometimes even hitting (my poor fiance gets beat up all the time while I'm asleep). Try to do something to relieve or at least lessen the amount of stress felt before going to bed, excersice or try yoga or something calming. Maybe then the restlessness and talking and stuff will slack off or maybe even stop completely. I know I myself don't do it all the time. Good luck to you.
