George Duran (Ham on the Street) on the food network did an entire episode on cooking with canned food.
Here is the link to that episodes page, including recipes. Enjoy!

My mother makes a casserole she gave me the recipe to years ago. However, I've had to alter the number of cans (from 5 to 6), since you can no longer buy a whole chicken in a can (yes, whole, bones & all). Sounds kind of odd, but it's really very good. You can substitute cream of celery for the mushroom or chicken soup if you want. Here it is:
SIX CAN CASSEROLE
1 can cream of mushroom soup
1 can cream of chicken soup
1 can evaporated milk
1 can chow mein noodles
2 cans (large) chunk chicken
Mix all ingredients together in large casserole dish. If available, top with buttered bread crumbs and garlic salt to taste. Bake in 350 degree oven 30 to 40 minutes until bubbling.
