Line a 9x13 pan with ice cream sandwiches, top with 3/4 jar of hot fudge topping, then top with a container of Cool Whip, top that with crushed peanuts (or nut of your choice) then drizzle remaining fudge on top...freeze to set up. Then serve. Enjoy!

My wife makes the BEST chocolate Mousse that she says is SO EASY but wonderful nonetheless. She got this from her sister who got it from....
Here is the recipe from my wife's cooking BLOG:
The mousse is such an easy and fabulous recipe, and so rich and smooth and utterly chocolate!, that you will want it for your holiday repertoire and year round. Here it is, Lisa’s Famous Chocolate Mousse:
Crust:
1 1/2 c. chocolate cookie/wafer crumbs (can use chocolate graham crackers, or even plain graham crackers)
6 TBSP melted butter
Mix the melted butter and cookie crumbs with a fork, then press into the bottom and sides of a 9″ springform pan. (The sides will be about 1″ or a little more high.) Chill.
Filling:
12 oz. chocolate chips
5 egg yolks
3 TBSP of either brandy or orange juice (I’ve also substituted creme de cacao, and creme de menthe–if you use creme de menthe, use 1 1/2 TBSP, as it’s a VERY strong flavor)
1 1/2 c. heavy whipping cream
In a blender or food processor, mix unmelted chocolate chips, egg yolks, and brandy/OJ until thoroughly mixed.
In a saucepan on the stovetop, bring the cream JUST to a boil. As soon as it boils, remove from heat. With blender running on low, gradually add cream to chocolate/eggs/liqueur mixture, and blend for 1 minute.
Pour filling into crust. Chill for 5-6 hours. Remove ring from springform pan, and slice into smallish slices to serve (it’s VERY rich!)
Some notes: You really want to be sure the cream has just boiled–too long, and it will form a skin; not boiled, and it doesn’t cook the egg yolks and help the filling to set. Also, try to use the best chocolate chips you can get–I like to use the Ghirardelli semi-sweet chips you can get at Sam’s Club. If you use milk chocolate, it will be a different flavor, although still nice. You can top this with a little dab of whipped cream, although that seems a bit over the top–this is already in the category of you-don’t-want-to-know, in terms of points/calories. I’ve had great results with sprinkling a handful of fresh raspberries across the top.

The chocolate with fruit is a good idea.. or you could try this:
You'll need:
a bag of pretzels
a bunch of Hershey's kisses
Lie the pretzels flat on a baking sheet and put the hershey kiss right on top of it. Bake it on 225 for a little while -- try 5 minutes (if the oven has been preheated). Check on the pretzels a lot, and take them out when the kisses have ALMOST melted over the pretzels.. Then push down on the tip of the kiss to spread the chocolate.
And if you'd like, after you take the pretzels out of the oven, push an m&m down onto the center of each pretzel (but you don't have to).
It really is so good!

I make a good fake chocolate mousse.
Break up two milk chocolate bars and two dark chocolate bars.
Bring a half pint of heavy cream to a low simmer.
Pour over the broken chocolate. Add a teaspoon of any flavoring - rum, vanilla, coffee, etc. Let sit for a minute.
Stir until chocolate is melted and smooth. Refrigerate until chilled.
Whip with electric mixer until fluffy.
Serve in a chilled glass or bowl with a few pieces of fruit and maybe a vanilla cookie for a nice presentation. I like to serve it in a bowl made from a pizzelle (Italian cookie) with orange slices.

Easy Fudge Pudding Cake
* 1 cup all-purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 3/4 cup granulated sugar
* 1/2 cup milk
* 2 tablespoons melted shortening
* 1/2 cup chopped pecans
* 1 teaspoon vanilla extract
* .
* Sauce:
* 1/2 cup granulated sugar
* 1/2 cup brown sugar
* 1/3 cup cocoa
* 1 cup hot water
PREPARATION:
Sift flour with dry ingredients; stir in milk and shortening. Add pecans and vanilla. Mix until well combined then pour into a generously greased 8 x 8-inch square pan. Combine sauce ingredients; pour over cake batter
Bake the cake in a preheated 350 degree F. oven for 40 minutes. Set on a rack to cool slightly (do not remove the cake from the pan). The fudgy sauce will end up on the bottom of the pan. Serve hot or cold.
Easy Chocolate Mousse
INGREDIENTS
* 1 (3.9 ounce) package instant chocolate pudding mix
* 1 1/2 cups milk
* 1 (16 ounce) container frozen whipped topping, thawed
DIRECTIONS
1. Prepare the pudding in a large bowl using 1 1/2 cups milk instead of the suggested 2 cups.
2. Fold in the whipped topping until blended. Refrigerate until chilled and serve.
CHOCOLATE RAVE
This is a raved about chocolate creation. It's embarrassing when people ask for the recipe.
2 boxes pareve brownie mix
1 cup pareve (non-dairy) whip
1 pound semisweet chocolate, broken into pieces
Bake brownies in 9 x 13 pan according to package directions. When cool prepare ganache. Over low heat melt chocolate with pareve whip, stirring constantly. When mixture is thick and all chocolate is melted, pour over brownies. Allow to cool briefly and refrigerate. This is an intense chocolate experience.
Easy Chocolate Fondue in the Crockpot
INGREDIENTS:
* 24 ounces semisweet chocolate chips
* 1-1/4 C. evaporated milk
* 1/4 C. sugar
* 2 t. vanilla extract
* 1 T. fruit flavored liqueur
* Dippers: cubed poundcake, fruit, pretzels, cookies, marshmallows
PREPARATION:
Place ingredients (except dippers) into a crockpot. Cover and cook on high for 30 minutes. Stir well. Cook 1 more hour on low. Use skewers or small tongs to dip into the chocolate.

I bought some Frutti Dolce. It's a microwaveable chocolate coating. I just nuked it following the package directions, had all my fruits, cookies, pretzels, etc, ready and then started dipping. It hardens up very well at room temperature very quickly and is quite tasty. We even dipped canned pineapple chunks. It also comes in white chocolate if you want to make contrasting drizzles on your treats.
Bonus! The kids were absolutely fascinated. I think I only dipped a few items before the kids took over. So I got to sit back and sip my eggnog and just watch the kids make the dessert tray!

Chocolate Cornstarch Pudding
1/2 cup white sugar
3 tablespoons unsweetened cocoa powder
1/4 cup cornstarch
1/8 teaspoon salt
2 3/4 cups milk*
2 tablespoons margarine or butter
1 teaspoon vanilla extract
In a saucepan, stir together sugar, cocoa, cornstarch and salt.
Place over medium heat, and stir in milk. Bring to a boil, and
cook, stirring constantly, until mixture thickens enough to coat
the back of a metal spoon. Remove from heat, and stir in
margarine and vanilla. Let cool briefly, and serve warm, or
chill in refrigerator until serving.
Optional: Mix in 2 Tbsp instant coffee or espresso powder with the chocolate.
If you cool it, mix in some Cool Whip or other whipped cream to make it mousse-like.
*often, I use evaporated milk for this, you need 22 ounces total milk, I have used evaporated skim milk, and 2% evaporated milk as part of the total 22 ounces. Carnation brand makes those two forms of evaporated milk.
*I have used Splenda, and Equal as the sweetner too for my diabetic friends.

Try this! Simple, easy, and luscious!
Chocolate Pudding Cake
3/4 cup granulated sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
½ cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine
Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).
TOPPING:
½ cup of granulated sugar
½ cup brown sugar
1/4 cup cocoa
Mix topping sugars and cocoa together and sprinkle dry ingredients over batter.
Pour 1 ½ cups of tap water over all. DO NOT STIR.
Place in oven and bake at 350 degrees for 45 minutes or until topping is done.
(In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom. Serve in bowls with spoons.
Serves 6-8 people. Good with vanilla ice cream or cool whip.

Make a batch of rich dark chocolate pudding, let cool.
Take clear glasses (like lg wine glasses) and layer the pudding and whipped cream. Garnish with chocolate sprinkles and a strawberry. Looks elegant, but verrrrrry easy.

HEAVENLY HASH CAKE:
1 (12oz.) pkg. chocolate semi-sweet chocolate chips
4 eggs (separate)
2 teaspoons sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 pint whipping cream
1 cup pecans or walnuts, chopped (I use walnuts)
1 Angel Food Cake
Melt chocolate chips. In a small bowl, beat egg yolks and add to chocolate. Stir. Beat egg whites; gradually adding sugar until peaks form. Fold whites into chocolate mixture. Stir in nuts, vanilla and salt. Whip the cream and fold in last. Break cake into chunks and cover bottom of tube pan or deep bowl. Cover with a layer of chocolate mixture. Add another layer of cake pieces and cover with remaining chocolate mixture. Chill in refrigerator overnight.
