I would use chicken stock. You'll miss out on some of the flavors of sherry, but it probably won't be missed.
If you want to add a slight touch of acidity, a squirt of lemon juice or even vinegar would work, but not much!

You really don't need the sherry to cook with.Some cooks think the alcohol make a better favour.You could sub it out for chicken stock for a change.I would have to see your recipe to see what they are doing for a good substitute. But a rule of thumb, when alcohol is required you can sub in stock, or apple juice in its place.

You can either not use it, the amount is so small it is really just there as a flavor enhancer, or use some red wine vinegar or a little bit of FRESH lemon juice.

Instead of substituting I would just omit it. I have made cream of crab soup and not had any in the house and it didn't taste a whole lot different just not quite as rich. Enjoy !!

orange juice, pineapple juice or chicken stock. None of these will have the same flavor as sherry, but they have been used many times as a substitute.

Sherry or Bourbon - Orange or pineapple juices, peach syrup, or non-alcoholic vanilla extract. (Substitute equal amount of liquid 1 to 2 teaspoons vanilla extract.)
or
Sherry: Apple cider; non-alcoholic vanilla extract; coffee; or coffee syrup.
