Here's the cookies I'm already making: lemon tea cookies, Italian cookies, Chocolate Thumbprint cookies, Apricot cookies and Nut tarts.

My favorite Christmas cookies are my wife's Molasses cookies. They are the BEST. I brought these to our department Christmas dinner and several people remarked at how perfect they looked and tasted. Here is the recipe post from her cooking blog:

These cookies are simply melt-in-your-mouth delicious. I’ve been making them for years, often with help from my kids. Most recently, they’ve been co-opted by my second son as HIS specialty. I don’t mind a bit, because he can make them exquisitely and perfectly nearly every time. These are now called Nate’s Molasses Cookies even though they started out as mine.

Nate’s Molasses Cookies

2/3 c. vegetable oil
1 c. sugar
1 egg
1/3 c. molasses
2-2 1/4 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ginger
and about 1/4 cup sugar
Mix all the ingredients in order, then roll dough into balls and roll them in the extra sugar. Place them on parchment paper on a cookie sheet.

Bake at 350° for 10-12 minutes until they’re golden brown and cracked on top.

The ONLY down side to this recipe is how quickly the cookies disappear.

Sparkling Butter Toffee Cookies
• 1 cup sugar
• 3/4 cup LAND O LAKES® Butter, softened*
• 1 egg
• 1 teaspoon vanilla
• 2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon baking soda
• 1/2 cup English or almond toffee bits
• Sugar
Heat oven to 350°F. Combine sugar, butter, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking powder and baking soda; reduce speed to low. Beat until well mixed. Stir in toffee bits by hand.

Shape dough into 1-inch balls. Roll in sugar. Place 2 inches apart onto ungreased cookie sheet. Flatten each with bottom of glass to 1 1/2-inch circles. (If glass sticks, dip glass in sugar.)

Bake for 9 to 1l minutes or until edges are just lightly browned. (DO NOT OVER BAKE.) Sprinkle with sugar while warm. Cool completely.

*Substitute LAND O LAKES® Soft Baking Butter with Canola Oil right from the refrigerator.

TIP: English toffee bits and chips are available in the baking section of large supermarkets.

TIP: Cookies may also be flattened with a fork in a criss-cross pattern.

1 pouch Betty Crocker® sugar cookie mix
1/2 cup margarine or butter, melted
1 egg
Betty Crocker® colored sugars


1. Heat oven to 375ºF.
2. Stir cookie mix, melted margarine and egg in medium bowl until soft dough forms. Shape dough into 1-inch balls; roll in colored sugars. Place balls 2 inches apart on ungreased cookie sheet.
3. Bake 11 to 14 minutes or until edges are light golden brown. Cool 1 minute before removing from cookie sheet. Store in airtight container.

This website gives a basic recipe that can be done 4 different ways. I've made the Peppermint Buttons version, and everyone raves about it and can't get enough. It's festive and Christmas-y, and best of all easy to make and yields a lot of cookies per recipe. Enjoy!
