East and West are pretty much fixed - they're based on the rotation of the earth. So the map would either look the way it does, or look flipped top-to-bottom from what it looks like now. The early explorers who made the maps that led to our understanding of the layout of the world were primarily from the northern hemisphere. They determined north based on the north star, since it didn't move. Had the predecessors of our maps been developed in the southern hemisphere (using whatever fixed star was available there), then Australia would be on the top of the map.
