Spiced Almonds
Yield: 1 Servings
Ingredients
3 c almonds -- whole
1 lg egg white -- beaten until
1 foamy
1/3 c sugar
2 ts cinnamon
1/2 ts allspice
1/2 ts season-all seasoned salt
1/4 ts nutmeg -- ground
Instructions
Toss the almonds in the foamy egg white until coated. Combine the sugar
and all the spices in a small bowl. Toss in the almonds and mix until the
nuts are coa ted. Spread almonds on a greased baking sheet in a single
layer. Bake at 250 F for 1 hour. Cool slightly, then break apart. Cool
completely and store in an airtight container.

Here's a sweet/spicy version.
1/2 lb almonds
2 tablespoons sugar
2 teaspoons ground cinnamon
1/8 teaspoon paprika
1/4 teaspoon five-spice powder
1 pinch ground cloves
1 pinch cayenne
1 tablespoon corn syrup
Heat oven 400. Place almonds on a baking sheet. Toast 10-15 minutes, tossing often until golden. Remove. Let cool. Toss with the rest of the ingredients. Return to baking sheet. Roast 10 minutes. Let cool.
You can put whatever you want on almonds, or any other nut for that matter. Just make sure you have something to bind the seasonings to the nuts like a syrup or egg whites.

1/4 teaspoon crushed red pepper flakes
2 cups unblanched whole almonds
In a bowl, combine the first six ingredients. Add almonds; toss to coat. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 250° for 30 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container. Yield: 2 cups.

Orange Spiced Almonds
2/3 cup sugar
3 teaspoons grated orange peel
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1 egg white
1 tablespoon orange juice
3 cups whole unblanched almonds
In a small bowl, combine the sugar, orange peel, cinnamon, allspice and ginger. In a small mixing bowl, beat egg white and orange juice. Add almonds; stir to coat. Sprinkle sugar mixture over almonds; mix well. Spread in a single layer on a baking sheet. Bake at 300° for 20 minutes. Remove to waxed paper to cool. Yield: about 3-1/2 cups.

Almond Chicken:
1/3 cup lemon juice
3 tablespoons Dijon mustard
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon white pepper
4 skinned and boned chicken breast halves
1 teaspoon olive oil
2 cups reduced-sodium fat-free chicken broth
1 teaspoon cornstarch
1 tablespoon water
3 tablespoons orange marmalade
1 tablespoon light margarine
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dried crushed red pepper
2 tablespoons chopped fresh parsley
1/4 cup sliced almonds, toasted
Whisk together first 5 ingredients. Place in a shallow dish, reserving 1/4 cup mixture. Add chicken to dish; cover and chill 1 hour. Remove chicken from marinade; discard marinade.
Cook chicken in 1 teaspoon hot oil in a skillet over medium-high heat 8 minutes on each side or until done. Remove chicken, reserving drippings in skillet.
Add reserved 1/4 cup marinade mixture and chicken broth, stirring to remove bits from bottom of skillet. Stir together cornstarch and water; add to broth mixture. Bring to a boil; cook, stirring constantly, 1 minute.
Stir in marmalade and next 4 ingredients. Return chicken to skillet; spoon sauce over chicken. Sprinkle with parsley and almonds.
Yield: 4 servings

They are good if you crush them and coat a nice piece of fish and pan fry it with a cream sauce.
