does anyone have a good recipe for a good light hard roll . one with light and airy center and crisp crust.seems all i ever get is like a rock with hard chewy center.

You have to buy them when they are fresh out of the oven. Any restaurant that buys the dough for petit pain from the company vie de france will have some darn good hard rolls.
