Every noticed how the genie always grants three wishes - why 3 ?

You screw the first one up, the second one gets you back to where you started and the third one screws up again. All in all, may as well just ignore the oil lamp and offer it to someone you hate. No good ever comes from three wishes.

The wishes are gifts that the Genie is bestowing. It's a reference to the three gifts Jesus received from the wisemen.

I guess they didn't want to give too many wishes, to put pressure.
Two and one were too little
But four is too much
So three seems perfect, besides, it's very proportional and there are always either three riddle, threee wishes, three sisters or brothes etc, etc, etc
