The most important is the level of maturity of cheese. I like it very strong. It is an essential part of most of my meals, I have to say.

Extra Sharp Cheddar. The single most popular cheese in the world (and for good reason.)
At least according to John Cleese when he was in the cheese shop.

I love Feta Cheese, or in India and Bangladesh they have Paneer, its basically just a different name for Cottage Cheese

Living in Switzerland, I can tell you this is cheese heaven!
Gruyere is my favorite, but then there's Reblochon, Tete de Moine, Tilsiter, Chevre, ou mon dieu ils sont trop!
