It's as tough as an old boot, but there's so much left I can't bear to throw it away. I'm looking for a recipe that can somehow transform it into an edible dish. Thanks.

make yourself a pot of beef stew. cook the cubed meat for about an hour in the broth before you add the veggies.

What about using your beef in a nice risotto, fry your onion´s nice and slowly with 2 cloves of garlic, chop up your meat , and salt pepper , add a little mixed herb´s, then add your meat stir then add some white wine, don´t have the heat full on just enough till the alcohol has burnt off then add half cup of water turn down the heat , when your rice is almost cooked add to the meat ,don´t drain all the water from the rice ,keep adding it to the risotto sure the meat will not be so hardf 2nd time round, you could add tomatoes or anything else you fancy

I would dice or mince the beef, mix it into a skillet of fried potatoes and onions. You can top it with shredded Cheddar, cover long enough for the cheese to melt; maybe the locked-in steam will help soften the meat some, too.

I wouldnt want to throw it away either!! beef is expensive, especially good cuts!! I would make a casserole with it, slow cooked, lowish oven temp. for about 2 hours.

chop an onion into slices, add a few diced carrots, turnip, or use shallots instead of the onion, good beef stock, a bouquet garni, a slug of red wine, put all ingredients in casserole dish, and cook as above, serve with boiled small whole potatoes in their skins, and fine green beans. enjoy!

put it in a crock pot with tomato sauce on low for six hours. When it is done the meat will just shred and be so tender! Serve it over pasta of your choice with some nice crusty italian bread and parmesan cheese! If you don't have a crock pot, use a regular sauce pot and simmer in the sauce on as low a setting you can for about 2 hours, stirring every 20 minutes or so.

Mmmmmmmm. I do this all the time with old meat.

Either chop it up into small cubes and put it with stock, a chopped onion, and an assortment of various root vegetables that you like, then cook in the oven for an hour, or, if you have a mincer, mince it up with an onion, add a tin of chopped tomatoes, some herbs, and recook in a pan for ten minutes. Serve with pasta , or rice.

I would concur with the Broth idea.

Make a good Chinese style soup - clear and tasty, with lots of herbs and fresh veggies, pop the meat in towards the end of cooking (cut into thin strips) and it will tenderise in the liquid.

Grind the meat or cut in small chunks and use in your favorite chilli recipe.

Also you can slice it up and reheat in beef broth - the meat will absorb the broth and become very moist.
