My husband gets bored very quickly and easily with sandwiches despite a large variety of toppings. He is happier with dinner-type lunches and I'm happy to ablige. It's easier for me to send left overs from the night before than to make up a sandwich anyway. But when it comes to snacks, because he likes as much variety as possible, I rack my brain trying to constantly come up with new ideas. I've used snack bars, nuts, fruit, dried fruit, pudding, cut veggies with dips, etc. He's not a fan of chips or crackers with lunch. Does anyone have some DIFFERENT, EXCITING and yet still simple to put together snack ideas for my grown, 265lb, 6'2" husband?? hahahaha. Please. I feel so sorry for him and I can't seem to think of interesting enough lunches for him on my own.

Since he's carnivorous, I'd 'trick' him into eating more veggies with his meat. Make wraps/pinwheels. You could just take a tortilla, spread it with chipotle mayo, layer with lean sliced turkey, cheese, a lot of veggies and then roll it up and chill it a couple hours. Then slice them into 1/2 inch slices and it's a snack food instead of a sandwich. You can make them with anything he likes in there, and you can make several at a time and just slice them when you need them.

You can also stuff pretty much anything you like in an eggroll or wonton wrapper and fry it up. They make great little snacks. I 'cheat' and start with Jimmy Dean Spicy sausage, add finely grated cabbage, sesame oil, soy sauce, ginger, finely chopped water chestnuts, roll them up and fry them. Much faster than it sounds. I also recently saw a recipe for a Chorizo-Cheese Egg Roll. They used chorizo, browned and drained, and then added Queso Fresco, a mexican cheese. They rolled them into mini egg rolls using wonton wrappers and fried them up. They sound intriguing and I'll definitely try them.

Get creative with sandwiches as well, and then cut them into squares to make them snack sized. One of my favorites is lightly toasted marble rye, spread with cream cheese, top with crispy bacon, tomato slices and alfalfa sprouts. Or a tortilla, spread with almond butter (or peanut butter might be good - I've never had it tho - allergic) top with chopped tomatos and sprouts, roll up and you've got a vegetarian cold burrito thingy. You can limit the portion size to a snack item by the size of the tortilla you use.

Baked potatoes make good snacks, too. Just pack a variety of toppings. You can bake a lot of potatoes at once and just rotate the toppings. If he's got access to a microwave at work, he can actually end up with a pretty filling meal just off a potato.

I hope I've at least given you a few ideas. You don't have to make anything totally new, just present it in a different way, shape or form. Then you can pass it off as 'new'.

I'm feeling your pain! what about making home made cookies? you can change up the ingredients a million ways. Make oatmeal so you can say they're healthy. If he likes veggies, try scouting the grocery store for some out of the ordinary stuff, like jicima (a very crunchy root vegetable) or radishes instead of carrots and celery. You can add stuff to the dip too, like garlic or crushed red peppers to change the taste. We like to go to Trader Joes for snacks. I don't know if you have that store where you live, but natural food or organic stores sell tons of healthy snacks, We like to get the fruit leather. I know how you feel! What about making a tray of chicken wings/legs with bbq or honey sauce on, then wrap these up as snacks. Also Mini sausages with a ketchup dip, scotch eggs, sausage rolls. You could make a spanish tortilla with chorizo, mushrooms, potato etc and give him slices of that during the week. It keeps pretty well in the fridge. Or a plain old hard boiled egg!! Cornish pasties are also pretty good, and filling. aswell as slices of quiche.Or you can even give small portions of cheese. Happy eating to him!!

It already seems you have quite a variety. Just rotate them.

I gave up on trying to anticipate my hubby's lunches and what might he be in the mood for. I let him do the shopping for that type of stuff then he gets what he's in the mood for and I don't waste food.

How bout yogurt with some crunchies. Lemon or vanilla w/ chocolate cookies. Or granola cereal in various flavors of yogurt. Trail mix that you make yourself based on your own likings. Herring in cream sauce with crackers. Apple wedges w/ peanut butter. I'm checking back for other's suggestions! Great question.

How about tortilla rollups or flatbread sandwiches? You can take deli roast beef, mix garlic and herb cream cheese with a dash of horseradish, spread it on the tortilla, top with cheese spread, meat, provolone, dried tomatoes, arugula and roll them up. Any variety of meat and cheese will do. Also, rice cakes topped with hummus make a great meal and can be held in the hand while driving. Meat and cheese rollups along with a cup of soup might also be a nice change. Add a tasty peach, cut in slices and sprinkled with cinnamon and you have a decent meal. Good luck!

Hi....I go through exactly the same things as you but the difference is that my husband don't care what I make him & I'm the one who get's bored with making the same ol' thing & want to make something different for him, even though he get's a wide variety of things to begin with. Is ur husband able to heat food up at work? If not, invest in a good thermos to keep some of the food warm. Here r some ideas,.......
---When u cook a roast, intentionally cook more than u need. If u r making a roast in which the meat can be pulled apart (as in pulled pork or even beef) with 2 forks (or even cut in small chunks). Mix this meat up with BBQ sauce, green pepper's & onions. Have him put it in a thermos to keep warm (or heat up at work) & when lunch time comes, he can put them on a large kaiser roll.
---cook up a nice, tender steak. Cut into slices. Take a tortillia wrap & spread odonzolla (type of blue cheese, mild though) or even cream cheese over tortillia (helps prevent tortillia from getting soggy). Mix the beef with onions, pepper's, tomatoes, lettuce & make him a couple of beef wraps.
---Make a beef stew or chili & put in a thermos, with a large kaiser roll.
---Egg salad sandwiches with chunks of chicken in it.
---As far as ur sandwich's go, try using a variety of different breads, rolls, etc.
---Bread some boneless chicken breast & put on a sub bun with mozerella cheese & spaghetti sauce.
---u can also make him some potato or macaroni salad as a side.
---as far as snacks go, it sounds like ur doing good already but y don't u start baking some snacks for him?
---if he is able to heat his food up at work, u can make him pizza subs
Well, that's all I can think of for now. I'm sure there is more but I'm drawing a blank, lol. Just play around with ideas, experiment, look online, start baking. And ask him to come up with some ideas too. It all shouldn't be on ur head what to decide to make for him all the time. It's his lunch, he can participate too, lol.
