I'm wondering if you're referring to the need to cook foods longer at a higher elevation? The higher you go above sea level, the less heat it takes to make water boil, and the longer it takes to cook most foods as a result. I don't know of any such requirements that have to do with latitude instead of elevation.

Closer to the north....naaah. Only the altitude makes a difference in cooking times.
