I think you have some good answers here, but an extra point or two.

1. I'm sure all brides have also heard horror stories of the lab screwing up film in the developing. Digital eliminates that possibiliy.

2. I'm sure all brides have heard of camera malfunction and nothing coming out. Digital also eliminates that possibility.

3. Digital allows you to reveiw the picture immediately for QA and then you have the ability to take another shot or two.

4. Speed - you can produce an electronic photo album (unretouched) in a day or two. No way film can do that.

5. Cheaper for the total package.

6. They can send that electronic album to relatives and friends to order more pictures = more money for you.

7. You don't have to stop and change film rolls.

8. You can take many more shots at now extra cost to the bride.

9. Find out why they only want film. You can then overcome their objections, no matter what it is. That is called sales.

10. Most professional photographers do not offer the negatives to the buyer. Or, they want a bare bones wedding and the photographer only supplies the negatives with no prints, albums, etc. You could still do that by offering them the digital card.

They're afraid that ALL digital cameras will produce the same over-sharpened, over-saturated, infinite depth of field, CA infested, distorted, noisy ISO 200 crap that they see with their own point & shoot.
Give them a 30 second briefing to assuage their worries while you leaf through your portfolio.
* not the case with digital SLR cameras...
* the image quality is in these $1200 lenses...
* umm, patented technicolor pixels...
* and eh, state of the art NASA chips...
Pause at one or two 8x10's and point out a how you made them even better with Photoshop.
Then simply offer to use film.

I'd show them several images and ask them to tell me which ones were done with film.
But, hey, it's their "big day" and the amount of work for you is probably less with film than with digital.
I prefer shooting with film myself. I shoot weddings from time to time (in fact, I have one this weekend) and usually I use both.
I think some people may prefer the film "look" (or at least think they do. Frankly I doubt many of them could tell the difference, but they've read it in one of the huge wedding industry magazines.) So just go with the flow and humor them to make happy, smiling clients.

They are uninformed. You need to do a better job of educating your client before you sell them a package. Line up several satisfied customers and use them as references. I have a few friends that are wedding photographers and they have no issues with the digital format.

Maybe they just want to have the negatives that come with film pictures?
