I know 'Lancashire Hotpot' from my youth, it's a stew of meat, veg and potatoes served in the pot it was cooked in.
Here in the East however, many 'Hotpot Restaurants' flourish.
A group sits around a table with a bowl of broth bubbling away in front of them. They then order raw ingredients from the restaurant which they place as they wish in the pot. There is etiquette involved in using personal and public utensils for hygiene's sake.
My girlfriend has a 'Hotpot' whenever her friends come over.
(I go down the pub)

Chinese Way of Eating.
They boil a big pot of soup on the dinning table, and start cooking thin slice of meats (commonly lamb), Vegetables, Meat Balls etc.
The point of it is to eat cook food directly after cooked.
As this way of eating gets common, cheap ones are not hygienic.
