I had one in Budapest last year, it was cheese soup,
The unusual thing about it though was the way it was served. It was served in a bun. A hollowed out big bun which had had the top cut off of it, and the soup served inside

Many years ago - about 40, I was on holiday in Guernsey, Channel islands.
The B&B I was staying in, served up marigold soup. True! It was made from the flowers and had the petals floating in it.
Most people said they enjoyed it (don't know if they were being polite) I thought it was horrible.
They told me aftewards that it was a fairly common recipe.

An eccentric friend of mine once acquired a new blender and was experimenting with different soups.
Pork soup was a highlight.
Chunks of pork mixed with cream and seasoning, blended together.

Spam soup, it's actually not bad. For lack of a better meat to put in the soup, spam turned out to be pretty good.

I once made garlic soup. It was fabulous.
Also herb soup which is lovely and fresh
