As someone who has recently started cooking, I am extremely confused as to the difference between all of these things. I understand that they all belong to the onion family in a broad sense, but how can I distinguish between them? Do some or all of those terms refer to the same thing?

Scallion: Young onion with and undeveloped bulb. Used for salads or as garnish

Green onion: Onion that is ripe, but that has not been left to dry out in the sun like the onions with the brown skins.

Spring onions: Also called salad onions. The mild flavoured bulbs have a thin skin, which peels of easily.

Shallot: Small onions. They have smooth and firm bulbs that has a garlic flavour.

Chives may be part of the onion family, but do not have the white part at the bottom. They are an herb, much like oregano or sage would be. They are not the same as the stalks of an onion
All the rest of the terms I have heard used interchangeably in the USA. Personally, I think there is a difference between shallots and green/spring onions, but it is merely the age of the onion.

scallions,green onions,spring onions are all the same thing. shallots are in the onion family as are chives but not a true onion.any onion harvested before it bulbs is referred to as a green onion,spring onion or scallion

they are all different varieties like apples they come in many flavors and colors etc..
