Well... you're welcome! And here it is again, just to make this answer legitimate.


Boiled Fruit Cake

Ingredients:
12 ounces mixed dried fruit
5 ounces glace cherries (roughly chopped)
2 ounces mixed peel
2 ounces walnuts
3/4 cup butter or margarine
1 teaspoon mixed spice
1/2 teaspoon baking soda
1 cup milk
12 ounces self-rising flour, sifted
2 eggs
1 1/2 cups white sugar

Directions:
1. Preheat oven to 325 degrees F (160 degrees C). Line one 8 inch deep sided cake tin with greasproof paper.
2. Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool to body temperature.
3. Stir in the flour and the eggs. Pour batter into the prepared pan. Wrap outside of pan with brown paper or newspaper.
4. Bake at 325 degrees F (160 degrees C) for 40 minutes then reduce temperature to 300 degrees F (150 degrees C) and continue to baking cake for 1-1/2 hours. Remove cake from oven and allow it to cool in tin for 5 minutes then turn it out onto a cooling rack, remove greaseproof paper and leave until cool. Cake can be stored for up to 6 months wrapped in foil and in an air tight tin.

Original recipe yield: 1 - 9x5 inch loaf

PREP TIME 15 Min
COOK TIME 1 Hr 30 Min
READY IN 1 Hr 45 Min

INGREDIENTS

1 cup water
4 cups candied mixed fruit
1 cup white sugar
3/4 cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

DIRECTIONS

Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

Fruit cake is a type of poison... if you're going to boil it watch the water so that a spy doesn't use it to kill some poor russian guy.

sounds like "Clootie Dumplin" thats what its called in Scotland. Its fruit and suet mixture made in a material bag and simmered in a pot. Actually very tasty.
