I heard that as far as veggies go, they rank at the bottom, being mostly water and a little fiber, not much in the way of vitamins or minerals. Why eat them?

Hey Kevorkian, of course cucumbers are botanical fruits but they are also veggies in the culinary sense. Just as lettuce is a leaves, carrots are roots and potatoes are stems.

Lettuce- aids digestion and promotes liver health. It can also reduce the risk of heart disease, stroke and cataracts. Other research shows it helps to reduce the risk of cancer and may ease nervous insomnia.

If iceberg is the only type of lettuce you eat, you are choosing the least-nutritious member of a family of nutritional champions. Any other lettuce or leafy green vegetable would be a better choice. Most other greens are also good sources of vitamin C, beta-carotene, folate, and dietary fiber as well as some calcium.

As a general rule, the darker green the leaves, the more nutritious the salad green. For example, romaine or watercress have seven to eight times as much beta-carotene, and two to four times the calcium, and twice the amount of potassium as iceberg lettuce. By varying the greens in your salads, you can enhance the nutritional content as well as vary the tastes and textures.

Cucumber- The fruit is commonly harvested while still green, and eaten as a vegetable, whether raw, cooked, or made into pickled cucumbers. Although less nutritious than most fruit and vegetables, the fresh cucumber is still a very good source of vitamin C, vitamin K, and potassium, and also provides some dietary fiber, vitamin A, vitamin B6, thiamin, folate, pantothenic acid, magnesium, phosphorus, potassium, copper, and manganese.

I eat lettuce and cucumbers the lettuce holds in my cucumbers and tomatos when I eat a sandwich of cucumber and tomato so actually it becomes a lettuce, cucumber, tomato sandwich. Lettuce has an enzyme that helps digestion! Cucumbers are said to cut down the chance of getting warts and reduces sagging eyes. Some claim regular eating of cucumbers slow down aging. Well Cucumbers are 83% water. What's your body made up of mostly? 83% water! They might not have much in vitamins & minerals but they get in the system faster than the veggies with more vitamins! I must admit I do eat more spinach, cabbage and broccoli , than lettuce! I sure do like cucumbers! I can eat 7 of them in 30 minutes!

Because salad is better with lettuce and cucumbers taste amazing with ranch dressing. I mean they may be of very little nutritional value but , why do people even eat packaged foods, they have very minimal nutritional value if any and they kinda just make you fat. At least lettuce won't give you saddle bags

They SHOULD rank at the bottom as far as veggies go, especially since cucumbers are fruit.

You eat them because you like the taste, genius.

Some food taste better when eat with them and certain recipes need them as the main ingredients.

Aside from the taste that some people enjoy, they have great texture. Not everything that you eat has to have great nutritional value. What's important is variety.

As far as lettuce goes, iceberg lettuce has very little nutritional value, but other lettuce varieties, such as romaine, have significant nutritional value.

wait till your taste buds mature a bit.Theres nothing like a crisp salad as an accompaniment,or by itself.Whether the dressing is french,plainvirgin oil and vinegar,or blue cheese dressing.

They taste good, they are refreshing, rehydrate you, and help people who want to snack, but are not looking for empty calories, and have a hard time digesting the fiber in celery.

Lettuce is roughage, and if you get the right mix (rather than anemic looking iceberg) it tastes good. Salad fills you up, low cal, great for dieters.

Cucumbers, for me, equals sushi. So I love it.
