Is it possible to change the settings on this camera to reflect a high-rez photo?

Cameras all have a default DPI setting - different for each brand - but you can override that setting in an image editor when you make prints. That's all the DPI setting is: in instruction for the printer. DPI doesn't say anything about the quality of the picture file itself.
The Sony DSC-P10 is limited to 5-megapixels, with a maximum resolution of 1944 x 2592.
At 300 DPI, your prints will be:
1944/300 = 6.5 inches by
2592/300 = 8.6 inches
If you settle for a tad less DPI, you should still be able to make fantastic 8x10 inch prints.

It's not the camera that determines the dpi, it is the software you use to open up the photo file. Generally, photo editing software will default to 72 dpi.
