HI TRACY

I have been told it has to do with the age of the egg, with how the egg is boiled, with the kind of chicken and various other old wives tales. I just find a small spot where you can get through that inside membrane and the rub cold water under it. You still have some tough spots but its a bit better. Good luck. By the way, I am not Martha Stewart.

The eggs that peel easier are older. I HATE fresh eggs when I have to peel them & keep them intact. I have tried every trick in the book & still the eggs tear up. So, what I do is buy the fresh eggs & then let them stay in the fridge for a week or so before I need to boil them up. I just get enough to use all week & those just sit.....

The best way to peel a hard boiled egg is to roll it on a flat surface, using a little pressure. The egg shell will come off easier. As to why I am guessing it is all in how the shell is broken.

I always cool down mine very quickly in running cold tap water until the egg is fairly cool to the touch and that seems to help a lot in the peeling process.

My mother insisted that the older the egg the easier it peeled. That has been my experience also.

If they don't peel well its because they're a little too fresh. Peel them when they are still warm to get the shell off better.
Make sure they are fully cooked, that helps too.

The faster you cool an egg after you boil it the better it usually peels, it also helps if you make sure you have the freshest eggs possible.

fresh eggs are harder to peel, if they are a little older, they peel really great

It has to do with the freshness of your eggs. The fresher the egg, the easier it is to peel.
