No matter what kind of chocolate or in what state the chocolate is in, (chips, morsels, bars, frosting, dipping), make sure there is actual cocoa in it, or it specifically states milk chocolate, white chocolate, dark chocolate which is less sweet, or bitter chocolate.....What you are going to use it for is very important. Cookies-chips or chunks, Fudge-squares, chips, or cocoa, cake-cocoa, Frosting-chips or squares, Candy-chips, squares, or bars, Eating-choose milk chocolate or dark chocolate first-then once you've decided there is Hersey's, Ghiradelli, Symphony(my favorite), Godiva, and many others. Just make sure the chocolate is real...Also there is sugar free candy made with chocolate for the diabetic in your family and it's pretty good.......Hope this lesson has been a good one...........HaHa

depends on the reason I need it.. for cooking, or for munching?
I always have a can of real cocoa powder for cooking, sometimes I buy the chocolate bark (looks like chocolate in an ice tray) for making some baked goods
I like a real good chocolate bar for my chocolate midnight cravings.. I buy the real expensive swiss chocolate bar that is dark.. the more cocoa per volume, so a little sliver can go a long way.. I make that bar last for days..

Japanese and Italian chocolates are very good. There is alsov ery dark chocolate from the Kyrgyz Republic which is excellent and not too sweet. I love those chocolates with real liquor stuffed in them---rhum, whiskey, all those spirits, whm. I can only get these on very rare occasions.

quality chocolate should should not have white hazing or it is stale. Chocolate from Belgium tends to have high fat to coca ratio which is great for making truffles, it depends on your use. Trader Joes offers European chocolate at affordable prices, especially during the Christmas season.

Depends on what I want to use it for...if it's baking, then I look for unsweetened....if it's making cookies, then I usually look for a high quality bar that I can chop into pieces. If it's just to eat, then I usually go with a hershey's bar with almonds...yum! :) And if it's for a gift, then I usually go with Vahlrona or Godiva chocolates.

I look for quality . One bar of good chocolate is better than 10 lousy tasting ones.

what they're familiar with and have good memories with. it's an emotional food. and if you're going to splurge on it, most people just get what tastes good not what's healthy.
