Yogurt Cheese

A delicious, creamy cheese that perks up bagels and sandwiches. Very simple to make and the variations are endless. Try to use a full fat yogurt such as Balkan style. You could easily experiment with many other ingredients such as, chopped olives, fresh herbs or sweet ingredients.
Original recipe yield: 2 cups

PREP TIME 5 Min
READY IN 2 Days


INGREDIENTS
3 cups plain yogurt
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon minced garlic
DIRECTIONS
Line a strainer with two layers of cheesecloth. In a medium bowl, mix together the yogurt, salt, pepper and garlic.
Pour into the cheesecloth lined strainer. Place the strainer over another bowl to catch the liquid, and refrigerate for 1 to 2 days, until all of the liquid has drained off. Empty the drainage bowl occasionally so you can see when the cheese has stopped draining.
Transfer cheese to a covered container, and store in the refrigerator for up to two weeks

Ricotta is actually ricotta not yogurt.

You make yogurt cheese by simply straining plan yogurt in cheesecloth over a bowl.

It will be the texure of cream cheese. You can flavor it many ways.

I like the Greek style yogurt best for this.

Yes you can.
1. Boil the milk on a gas stove.
2. When the milk starts to boil and vinegar to spilt the cheese from your milk
3. Use a cheese cloth to get the water to separate from the cheese.

I made some using fat-free plain yogurt and it worked just fine! Also, I didn't have cheesecloth, so I used paper towels and the method described above. Weird, but it did the job.
