Here's a sweet snack:

Sugar and Spice Nuts

¼ cup butter
3 cup pecan halves
½ cup sugar
3 T sugar
1 T cinnamon
½ t ginger
½ t nutmeg

Melt butter, stir in ½ cup sugar and nuts cook over medium heat until sugar melts and pecans brown (8 – 10 minutes). Combine all other ingredients into large bowl. Stir in caramelized nuts. Spread on waxed paper. Cool and break into individual nuts. Store in airtight container.

Christmas cookies

1¾ cups sugar
1 cup (2 sticks) good oleo or butter
4 cups flour
2 large eggs
1 level t soda
1 t vanilla
⅓ t salt
1 t butter flavoring

Cream oleo, add sugar and beat until fluffy. Add eggs and beat in. mix in vanilla and butter flavorings. Stir salt and soda into flour. Add flour a little at a time to egg mixture. Dough will be very thick. Can be shaped into rolls, chilled and sliced. For Christmas cookies, roll out on lightly floured surface. Cut desired shapes. Bake on lightly greased cookie sheets at 350° for 10 – 12 minutes or until lightly browned.

Chocolate Glazed Triple Layered Cheesecake

1 8½ oz. pkg. choc. wafer cookies, crushed, about 2 cups
¾ cup sugar, divided
¼ cup plus 1 T butter or oleo melted
2 8-oz. pkg cream cheese softened and divided
3 eggs, to be used separately
1 tsp vanilla extract, divided
2 1-oz. squares semi sweet chocolate, melted
1⅓ cups sour cream, divided
⅓ cup firmly packed dark brown sugar
1 T all purpose flour
¼ cup chopped pecans
5 oz. cream cheese softened
¼ t almond extract
Chocolate Glaze (follows)

Combine cookie crumbs, ¼ cup sugar, and ¼ cup + 1 T butter, melted in a medium bowl and blend well. Press into the bottom and 2” up sides of two 9” spring form pan. Set aside. Combine one 8-oz. pkg cream cheese and ¼ cup sugar, beat until fluffy. Add 1 egg and ¼ t vanilla, blend. Stir in melted choc. and ⅓ cup sour cream. Spread over choc. crust. Combine remaining 8-oz. pkg cream cheese, brown sugar and flour. Beat until mixture is fluffy. Add 1 egg and ½ tsp vanilla, blend. Stir in pecans, spoon over choc. layer. Combine 5-oz. cream cheese and ¼ cup sugar, beat until fluffy. Add egg, blend, stir in remaining 1 cup sour cream, ¼ t vanilla, and almond extract. Spoon gently over praline layer. Bake at 325° for 1 hour, turn off oven and leave cake in oven for 30 minutes. Open door and leave cake for additional 30 minutes. Cool, chill 8 hours. Remove + spread warm choc. glaze.

Chocolate Glaze:
6 1-oz. semi-sweet choc. squares
¼ cup butter
¾ cup powdered sugar
2 T water
1 t vanilla

Combine chocolate and butter, melt over low heat, add remaining ingredients. Stir. Spread while glaze is warm.

WINTER VEGETABLE SOUP

1 smoked picnic shoulder
1 c. each of the following WINTER vegetables: cabbage, cauliflower, carrots, patti pan squash, turnips, sweet potatoes, brussel sprouts, onions, broccoli
5 chicken bouillon cubes
1 c. barley
1 rib celery
Few sprigs parsley
2 hard cooked eggs (optional)

Trim excess fat from shoulder. Put in a large pot, cover with water and cook until tender. Remove meat from pot and set aside. Slice cabbage, carrots, and turnips. Peel and slice sweet potatoes and onions. Separate cauliflower and broccoli into flowerets.
Get the smallest patti pan squash and brussel sprouts available, leave whole. Put vegetables into ham stock (add bouillon cubes). Cook until tender.

Dice ham and add to stock with barley, celery and parsley. Simmer 20 minutes until barley and celery are tender. Add salt and pepper to taste. Enjoy add any combination of winter vegetables desired.
