If you value your health, the answer is no.
Salmonella build-up, even if the turkey had been in the fridge
all this time. If the leftover turkey was prompty frozen, then
you could after you nuke it on the microwave, but doesn't it taste like rubber?

Not unless you had it in the freezer. If it has been refrigerated since then, I wouldn't. Any refrigerated cooked meat should be thrown out after 3 days. Even refrigerated stuff spoils.
