Because fathers are protective of their daughters and the thought of their daughter(s) growing up to become young ladies is hard for them to deal with. They cope by pretending it's not happening and continuing to treat their daughters the way they always have in the past.

You know, I have two different answers to this, and which one applies depends on the reason you are asking, and the type of person you are. Also some on age.
1. If you want to know why he won't let you do certain things, like buy thong underwear or date or have cyber sex, it is probably a case of you trying to be older than you are.
2. I am going to assume this one is actually you: you are a young lady who wants Daddy to stop treating you like a baby- you aren't asking for anything extreme, just that he accept the fact that you are growing up. Daddies just don't like to do this. For one, if you're getting older, so is he. Secondly, for most dads, they fall absolutely head over heels for their baby girl from the moment they lay eyes on her. She's cute, sweet, and innocent. And, she's totally dependant on him.
Suddenly, in the blink of an eye (or so it seems to him) she's a teen- she's trying to be sexy instead of cute- or at least she's trying to be a different cute- she wants to be more sassy and less sweet, and she's not so innocent. In fact, he's not even sure he knows her anymore. He wants to cling to the image of that sweet baby she once was.
My advice? Let him keep that image as much as possible. It may be harder to get him to let you do things (say, go out to the movies with a group of kids your age and no adult-gasp), but he will trust you more while you're doing them, since he still sees you as innocent. In other words, he'll be worried about your safety instead of your behavior, which is a nice advantage.

Because no matter how old you are, you will always be his little girl. Face it, later in life you will cherish that fact.
You can also look at it like this: he loves you so very much and has given you so very much of himself that he's going to fight to the death to let go of that. That's how much he loves you hon.
So instead of rolling your eyes at his goofiness, or maybe I should say in spite of doing it lol, give him a hug and remind him that he'll always be your dad, even though you're growing up. It'll make a poor old man happy lol.

Because the father don't want to realize that they are getting OLD and their little baby is going to be taken away by some ungrateful jerk.

Because that is their job... I hate to say it but it is true! Just love him and he will come around.... he doesn't want to lose his little baby - even though he is making choices that is ticking you off!
