What do you mean self defense disciplines?
The martial arts that stereotypically make up an MMA fighters' repetoire involve:
at least one striking MA, such as Muay Thai, Boxing or certain types of Karate, like Kyokushin
at least one form of takedown grappling MA, such as judo, wrestling and sambo
some MA that involves fighting from the clinch, such as modified Boxing, Judo, Muay Thai or Wrestling
and at least one type of submission wrestling, such as Sambo, BJJ, certain forms of Judo, catch wrestling or CSW.
Along with these, there are some more exotic martial arts that fighters have been able to make work, like Le Savate and even TKD.

It has no limits or guidelines as to which disciplines or arts one must be proficient in, which is why it is included under the umbrella of "Mixed Martial Arts." However, the strategies are indeed constrained by the ban of kicks/knees to the head of a downed opponent, and the inclusion of a cage instead of a ring means it makes a "ground n pound" or general attack/flurry strategy more effective than it would normally be overall.

ANY Martial Arts fighters from ANY disciplines are welcome to fight in the UFC.
but the most featured kind're often like Kickboxing or Muay Thai, and some ground fighting disciplines like Judo or Jujitsu.

well now adays there is no style contrasts, if you go to www.ufc.com then go to STYLES you can see all of the styles that have been brought into the cage to form what is now called MMA= mixed martial arts,

All of them , most commonly grappling :jujutsu, judo, western wrestling, etc.. and striking :karate, kung fu, boxing , etc....
