Campfire Skillet Breakfast
1/2 lb. bacon
4 large potatoes, peeled and cubed
1/2 an onion, chopped, optional
6 eggs, beaten
1 cup cheddar cheese, shredded
In cast iron skillet over fire, cook bacon to desired doneness, rendering fat from it. Remove bacon and set aside.Add potatoes and onion to pan, cover and allow to cook for 10-12 minutes or until done. Crumble bacon into bite size pieces and return to pan. Add eggs and cover 2 minutes until cooked through. Top with Cheese and cut into slices and serve.
Breakfast Pizza
12 ounces ground Italian sausage
1 tablespoon butter
1 cup chopped onion
1 (12 inch) prepared pizza crust
1 1/4 cups pizza sauce
12 ounces shredded mozzarella cheese
8 ounces pork sausage links, sliced
12 ounces shredded Monterey Jack cheese
Preheat oven to 350 degrees F (175 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside. Over medium-low heat melt butter in a large saucepan. Add onions. Cook slowly, stirring occasionally, until onions are soft.Place crust on pizza pan. Spread pizza sauce over crust and add Italian sausage. Cover with mozzarella cheese and place sliced links over cheese. Spread Monterey Jack cheese on top of links.Bake in preheated oven for 20 to 25 minutes, until golden.
Hash Brown Quiche
3 cups shredded hash brown potatoes
1/3 cup butter, melted
seasoning salt to taste
1 cup diced cooked ham
1/4 cup chopped onion
1 cup shredded Cheddar cheese
2 eggs
1/2 cup milk
salt and pepper to taste
Preheat oven to 425 degrees F (220 degrees C). Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown. In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.
Oatmeal Blueberry Muffins
1 1/4 cups quick cooking oats
1 cup all-purpose flour
1/3 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil
1 cup blueberries, rinsed and drained
Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and oil; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter. Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.
Pumpkin Chocolate Chip Muffins
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup semisweet chocolate chips
Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners. Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt.. Add wet mixture and stir in chocolate chips. Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes.

I think the best thing for breakfast is a toasted everything bagle with bacon, egg, cheese, lettuce, and mayo. It is even better with a smoked cheddar cream cheese!!!!

scrammble eggs wtih some chopped chives, sliced olives,tomato and jack cheese
broil some turkey sausage patties
and fry some hashbrowns
