Maggie is right. The Coca-Cola company has different formulations of "Coke" bottled for different regions; even within the United States, Coke will taste different in Georgia vs. Idaho.
From trying Coke in Hong Kong, Costa Rica (really good), and the Coke I grew up with in the Midwest, I'd say the reason you like Mexican coke is because it is probably sweeter than the more base-stuff you get up North.

Not only does soda from other countries taste better, but chocolate too. The reason is mainly this: politics.
Outside of the United States, food and beverage manufacturers use good old fashioned beet sugar for their products. Up until the early 1970's, we did too here in America.
Nowadays if you look at the ingredients on most anything, you find high fructose corn syrup at the top of the list. So why did we stop using the superior tasting beet sugars? The answer is lobbyists from the "corn states" got Congress to pass a tax on sugar. In doing so, they made the price go up, and by comparison, corn syrup cheaper. In the pursuit of higher profit margins, the food and beverage makers exclusively use corn syrup. Elsewhere in the world, it is cheaper to use regular sugar.
You can still find some smaller companies here that make sodas and confections with sugar, but not many.

1) The formula made in Mexico uses regular plain old sugar instead of high fructose corn syrup. Yes, there is a difference.
2) Coca-Cola bottled in Mexico is usually in glass, which doesn't alter the taste the way plastic does (especially in hot weather).
Along with tequila and handcrafted silver, it's one of the few things Mexico does better than the US

You need to go to the Coca Cola Museum in Atlanta Georgia...Its awesome, You can sample coke from all around the world, some of them are nasty and some of them are better than our version, the reason its different is because it adapts to the peoples taste and culture.
