I'll Love You Forever, Robert Munsch
Essentially, this woman has a baby, and she rocks him to sleep by singing this song "I'll love you forever, I'll like you for always, as long as I'm living, My baby you'll be" It goes through the years of her little boy growing up, and how he can frustrate her, but she always sings the song to him, and so on, until one day she calls him and she can't finish the song because she's too old and sick, so, he goes to her, cradles her, and sings a variation of the song, with the ending line "My mommy you'll be". Goes back home, picks up HIS baby daughter, and sings it to her...

I think "You Are Special" by Max Lucado is a great one and "Guess How Much I Love You" by Sam McBratney is too.

i loved the rainbow fish!! my daughter is 1yrs old and loves it too..it teaches alot of values..anothier book we love is "love you forever" very sweet touching book..
