Here is what I would do:
Wash and dry the roast. Coat with a pretty good coating of salt and freshly ground (I like course) black pepper. Heat a pan (preferrably a regular stainless or cast still skillet very hot and sear (cook until brown) the roast on all sides. Do not move the roast around too much or it won't brown.
This may smoke up your house so put on the blower if you have one, or do it on the barbecue grill.
Next, place the roast in the slow cooker and cover about half way with water/ or maybe some of the beer. The quick/easy method is to add some onion soup mix to the liquid at this point, or you could add chopped onion, some garlic cloves, some more salt. Cook until the meat is very tender, and eat.

here's a "roast meat" family favorite in our house
Slowcook a roast with 2 boullion cubes and 1/2 cup water for 6-8 hours on low setting until fall-apart tender. Shred meat with two forks. Place in bowl and add 1 can cream of mushroom soup and 1 can cheddar cheese soup. Toast buns (we use hoagie buns or hotdog buns at our house), place a slice of cheese (cheddar or american work great!) on the bottom bun and top with some of the meat mixture and top with top bun. Serve with chips or fries and a cold soda, they're great!

place roast in baking dish, season as desired and add 1 cup water. Cover tightly with foil. Bake in 250 degree oven for 7 hours. It will be very tender (like almost falling apart). You can pull it apart with a fork for shredded beef sanwhiches. You can add 1 cup bbq sauce and mix well for BBQ beef sandwiches. You can also use leftover liquid in baking dish to make gravy.

I usually stick mine in with a little stock (1/2 c ish) and sometimes some BBQ sauce or sometimes just pepper and some mushrooms.... simple is best ! You could throw some beer in there too instead of stock.
